Meatballs-in-the-hole

Ingredients:

1 onion – finely chopped

450g minced pork

1 apple – grated

Handful mixed herbs (sage, thyme, parsley) – finely chopped

1 egg – beaten

50g breadcrumbs

Salt and pepper

150g plain flour

2 eggs

250 ml milk

Vegetable oil

Recipe:

1. Grease 2 x ANTA small baking dishes

2. Preheat oven 220C / 200C fan

3. Place the flour in a large ANTA jug, make a well in the centre and add the eggs, using a whisk combine then gradually whisk in the milk until you have a smooth batter with the consistency of single cream. Set aside for 15 minutes to allow to come to room temperature.

4.Combine the mince, apple and herbs together and mix in the beaten egg and breadcrumbs, season well.  Shape the mince into 18 balls, and brown them in a frying pan for 5 minutes.

5. Warm the baking dish in the oven for a couple of minutes. Arrange the meatballs in the bottom of the baking dishes and pour over the batter roast for about 10 minutes.
