Carrot And Coriander Soup

Ingredients:

  • 1 tbsp vegetable oil 
  • 1 onion, sliced 
  • 450g maple roast carrots 
  • 1 tbsp ground coriander 
  • 1.2 litres vegetable stock 
  • handful fresh coriander, chopped 
  • salt and ground pepper 

Method:

Heat the oil in a large pan and add the onion, cooking until soft. Add the carrots, ground coriander and season well. Cook for one minute.

Add the vegetable stock and bring to the boil. Simmer for 5 minutes.

Whizz with a hand blender until smooth. Sprinkle with fresh coriander and croutons and serve in an ANTA Porridge bowl.
