• 125g self raising flour
  • 1 tsp baking powder
  •  A  pinch salt
  •  1 egg, beaten
  •  150ml milk
  •  150g sweet corn
  •  1 tsp butter 
  • Mix all the ingredients into a bowl until everything is well combined. You are looking for slightly thicker than double cream consistency, you may need to add more milk.
  • Heat a heavy bottomed pan over a medium heat. Add the butter and once melted and foaming, add a ladle of batter. Cook for 2-3 minutes on both sides until golden brown. 
  • Serve warm with maple syrup and a crack of sea salt
