- 125g self raising flour
- 1 tsp baking powder
- A pinch salt
- 1 egg, beaten
- 150ml milk
- 150g sweet corn
- 1 tsp butter
- Mix all the ingredients into a bowl until everything is well combined. You are looking for slightly thicker than double cream consistency, you may need to add more milk.
- Heat a heavy bottomed pan over a medium heat. Add the butter and once melted and foaming, add a ladle of batter. Cook for 2-3 minutes on both sides until golden brown.
- Serve warm with maple syrup and a crack of sea salt
