• 400g left over mashed potato
  • 100g plain flour
  • 20g butter
  • 1 tsp baking powder
  • 2 eggs

1. In a bowl combine the mashed potatoes and flour making sure there are no lumps. Add in the baking powder.

2. Add the eggs and mix until it forms a dough.

3. Divide the dough into 4 and roughly form a round. Dust both sides with flour and place in a non stick pan.

4. Over a medium heat cook for 5 minutes on each side until beginning to brown.

5. Serve with butter and jam.
