Roasted Radishes- Simple, seasonal side

Ingredients:

  • 500g fresh radishes, trimmed
  • 2tbsp extra-virgin olive oil 
  • 1tsp sea salt 
  • 1/2 tsp black pepper 
  • 2tbsp butter 
  • zest and juice of 1/2 lemon 

Method:

  1. Preheat the oven to 200°C 
  2. Toss the radishes with olive oil, salt and pepper on a baking tray. 
  3. Roast in the oven for 20-25 minutes until tender and lightly golden, stirring once halfway.
  4. Remove from the oven, add the butter (if using) and lemon zest and juice. 
  5. Scatter fresh herbs over the top and serve warm.
