Fresh Blueberry Cake

Blueberry Cake

Ingredients

  • 150g caster sugar, plus extra for dusting
  • 55g dried fruit
  • 55g blueberries
  • 100g butter
  • 225ml milk
  • 300g self-raising flour
  • 1 egg

Method

  1. Preheat the oven to 180°C / Gas Mark 5.
  2. Line a baking dish with baking parchment.
  3. Put the sugar, dried fruit, blueberries, butter, and milk into a large saucepan.
  4. Heat gently until the butter has completely melted. Stir well, then leave the mixture to cool.
  5. Add the self-raising flour and egg to the cooled mixture. Beat together gently until combined.
  6. Pour the mixture into the prepared baking dish.
  7. Bake for about 45 minutes.
  8. To test if the cake is cooked, insert a skewer or knife into the centre:
    • If it comes out clean, the cake is ready.
    • If it comes out sticky, return the cake to the oven for a little longer.
  9. Leave to cool slightly and dust with extra caster sugar if desired.
