Blueberry Cake
Ingredients
- 150g caster sugar, plus extra for dusting
- 55g dried fruit
- 55g blueberries
- 100g butter
- 225ml milk
- 300g self-raising flour
- 1 egg
Method
- Preheat the oven to 180°C / Gas Mark 5.
- Line a baking dish with baking parchment.
- Put the sugar, dried fruit, blueberries, butter, and milk into a large saucepan.
- Heat gently until the butter has completely melted. Stir well, then leave the mixture to cool.
- Add the self-raising flour and egg to the cooled mixture. Beat together gently until combined.
- Pour the mixture into the prepared baking dish.
- Bake for about 45 minutes.
- To test if the cake is cooked, insert a skewer or knife into the centre:
- If it comes out clean, the cake is ready.
- If it comes out sticky, return the cake to the oven for a little longer.
- Leave to cool slightly and dust with extra caster sugar if desired.
