Decorated Vanilla Cupcakes

Baking cupcakes is one of those simple pleasures that brings everyone together. From mixing the batter to licking the spoon, it's a recipe that little hands will love helping with. Once baked and cooled, the real fun begins, swirl over chocolate and vanilla icing, then let everyone decorate their own cupcake with their favourite sweets, chocolates and sprinkles. The messier the table, the more memorable the afternoon!
Ingredients
For the cupcakes
- 120g unsalted butter
- 120g caster sugar
- 2 large eggs
- 120g self-raising flour
- 1 tsp vanilla extract
For the icing
- Icing sugar
- Cocoa powder
- Water (or a little milk)
To decorate
- Chocolate buttons
- Colourful sweets
- Sprinkles
- Mini marshmallows
- Or any of your favourite toppings
Method
- Preheat the oven to 180°C / Gas Mark 4 and line 9 ANTA Small Mugs with cupcake cases.
- Cream together the butter and caster sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract.
- Gently fold in the self-raising flour until just combined.
- Divide the mixture evenly between the cupcake cases and bake for 8–10 minutes, until golden and springy to the touch.
- Leave to cool completely before removing the cupcakes from the mugs.
- Make a simple vanilla icing by mixing icing sugar with a little water (or milk), and a chocolate icing by adding cocoa powder to a second batch. Spread or swirl the icing over the cooled cupcakes.
Finish by decorating however you like. Scatter over chocolate buttons, colourful sweets, sprinkles or your favourite treats and let little imaginations take over. No two cupcakes need to look the same – after all, the best baking memories are often made with sticky fingers, colourful toppings and plenty of laughter.
